Quinoa with vegetables and meat
Ingredients:
- 200g quinoa
- 1 onion
- 1 red pepper
- 1 carrot
- 1 zucchini
- 200g beef fillet
- 1 tablespoon olive oil
- Soy sauce
- Salt and pepper to taste

Instructions:
- Cook the quinoa following the package instructions and set aside.
- Cut the onion, red pepper, carrot and zucchini into thin strips.
- In a wok or large frying pan, heat the olive oil and add the onion and carrot. Sauté for a few minutes.
- Add the red pepper and zucchini and cook until the vegetables are tender but still crisp.
- Remove the vegetables from the wok and set aside.
- In the same pan, cook the beef fillet previously cut into strips, season with salt and pepper to taste.
- Once the beef is cooked, add the vegetables back to the wok and mix well.
- Add the cooked quinoa and mix everything together.
- Add a splash of soy sauce and cook for a few more minutes so that all the flavors mix.
- Serve the quinoa with vegetables and hot beef fillet. Enjoy!
