    Ingredients:

    • 200g quinoa
    • 1 onion
    • 1 red pepper
    • 1 carrot
    • 1 zucchini
    • 200g beef fillet
    • 1 tablespoon olive oil
    • Soy sauce
    • Salt and pepper to taste

    Quinoa with vegetables and meat

    Instructions:

    1. Cook the quinoa following the package instructions and set aside.
    2. Cut the onion, red pepper, carrot and zucchini into thin strips.
    3. In a wok or large frying pan, heat the olive oil and add the onion and carrot. Sauté for a few minutes.
    4. Add the red pepper and zucchini and cook until the vegetables are tender but still crisp.
    5. Remove the vegetables from the wok and set aside.
    6. In the same pan, cook the beef fillet previously cut into strips, season with salt and pepper to taste.
    7. Once the beef is cooked, add the vegetables back to the wok and mix well.
    8. Add the cooked quinoa and mix everything together.
    9. Add a splash of soy sauce and cook for a few more minutes so that all the flavors mix.
    10. Serve the quinoa with vegetables and hot beef fillet. Enjoy!
